Farm Party Recipe: it's a Mystery!

Paige Pitzer of Riversong Gourmet has a deep-rooted connection to food. Growing up on a farm, she nurtured a palate for fresh ingredients, and experienced how food nourishes people, connection, and community. Many of her relationships growing up centered around agriculture, harvest and fresh food distribution. This passion led her to found Riversong Gourmet in 2009, and she has been crafting curated Montana-local dishes ever since.

Paige has catered everything from extended day river trips to weddings in Glacier. She appreciates the Montana food scene from roots to roasts, and brings the magic of our local agricultural community and her artistic vision together to create delicious and memorable events.

This year, we are more than excited to have the Riversong Gourmet crew transform fresh produce grown by Garden City Harvest into an unforgettable Farm Party meal.

We couldn’t resist asking Paige about her highly anticipated Blueberry BBQ sauce that she’s making for the Farm Party. With a touch of mystery, here’s what she had to say:

“Well, if you really want to know…..you will need to start with:

Soil that is a perfect Ph 4.5-5.5

Abundant water that is draining at just the perfect rate

6-8 hours of perfect Missoula sunshine

Hundreds of hours of daily devotion, from the nurturing farmers at Red Hen farms

(All of this adds up to the perfect Blueberry)

“There are a few other ingredients involved, but the next most important is the love of ranchers committed to doing right by the land, the community and the animals they raise, to offer you something amazing to eat with the sauce.

“And for all of our beloved vegetarians, the Blueberry BBQ sauce will be vegan, and amazing on all of the salads!

You may remember when the Garden City Harvest team prepared the entire meal. Our farmers still grow all the produce that goes into the meal, over 900 pounds! And then invite the chefs in to create something from the food that celebrates it fully!

As an homage to Farm Party’s past, we wanted to share the Garden City Harvest Roasted Beet Salad, simple and delicious!

ROASTED BEET SALAD

  • 180 lbs beets, peeled and chopped into large bite-sized pieces

  • 75 lb Walla Walla onions

  • 1.25 gallon safflower oil

  • Feta: 20 lbs from Lifeline (Feta-U-Beta)

  • Salt to taste

Roast the beets and onions in some of the safflower until fork tender. I’ll let you all choose the heat – I do it at 400 degrees. Let cool. Once cool, add the safflower oil and salt. Add feta just before serving.
